Sour dough – home made bread

Sourdough Bread with Olejanka Starter – A Simple Homemade Recipe

There’s nothing better than the smell of freshly baked bread filling your home. If you’d like to experience that magic, try this easy sourdough recipe using Olejanka’s starter. It’s a straightforward way to make delicious bread with a crispy crust and rich flavour.

Ingredients:

  • 200 g Olejanka sourdough starter

  • 305 g water

  • 478 g flour

  • 17 g salt

  • 2 tsp nigella seeds

  • 2 tsp flaxseeds

Instructions

  1. Prepare the starter:
    In a bowl, mix the starter with water. Feed your starter to keep it happy, then store it in the fridge. If you want to bake sooner, let it sit in a warm place for 2–3 hours.

  2. Make the dough:
    Add flour to the starter-water mix and knead for about 3 minutes. I use a stand mixer – it makes dough-making much easier. After 3 minutes, add the salt and seeds, and knead for another 8 minutes.

  3. Shape the dough:
    Place the dough on a glass or stone board – these surfaces stick less. Shape it into a ball and cover with a bowl for 5 minutes. Then reshape it and let it rest for an hour. Repeat this shaping process two more times, every hour.

  4. Fermentation:
    After about 3 hours, dust the dough with durum wheat flour and gently transfer it into a banneton (proofing basket) lined with a cloth. Place the basket in the fridge for 24 hours.

  5. Baking:
    The next day, preheat your oven with a cast iron pot inside to 230°C (445°F) for 25 minutes. Turn the dough out of the basket, score it, and place it on the upside-down lid of the pot. Cover with the pot and lower the temperature to 180°C (355°F). Bake for 25–30 minutes.

  6. Final bake:
    Remove the lid, increase the temperature to 230°C again, and bake for a few more minutes to get that perfectly crispy crust.

  7. Cooling:
    Once baked, transfer the bread onto a cooling rack. Wait 15 minutes before slicing to avoid a gummy texture.

Potato Salad with Linseed Oil

Ingredients:

  • 5 medium potatoes (I love the yellow Albert Barret ones from Lidl)
  • 1 small red onion
  • 5 medium pickles
  • A handful of fresh dill
  • A pinch of green chubritsa
  • Salt and pepper to taste
  • Flaxseed oil – a good amount, because it really boosts the flavor!
  • Optional: grilled or fried bacon, chopped into small pieces

Preparation:

  1. Cook the potatoes in salted water and let them cool down – they need to be below 35°C; otherwise, the flaxseed oil will lose its benefits.
  2. Cut the potatoes into chunky cubes and toss them into a bowl.
  3. Dice the red onion finely and the pickles into slightly bigger pieces – add them to the potatoes.
  4. Add chopped dill, chubritsa, salt, and pepper.
  5. If you’re adding bacon, now’s the time to throw it in.
  6. Drizzle a generous amount of flaxseed oil – don’t hold back, it really makes the flavors pop!
  7. Gently mix everything so that all the ingredients are nicely coated in the oil.
  8. Serve immediately or chill in the fridge – the flavors will meld together and the salad will taste even better.
